Fool-Proof Peanut Butter Cookies

I am NOT a baker. I am not even good at cheating when it comes to baking. (I've been known to mess up the $1 packet, just add water and bake cookies. 😏)

But these cookies, I can do!

I love Martha Stewart, but I never seem to have the right ingredients on-hand to make anything that she is making! These cookies are super easy and I always have these ingredients in my pantry. It only takes about 5 minutes to mix together, and 12 minutes to bake.


PRO TIP: Use a cooking spray on utensils and measuring cups for things like peanut butter.

My husband loves this recipe, and it's been a staple in my family for years. I hope you love it as much as we do.


Fool-Proof Peanut Butter Cookies


Ingredients:

Below are all of the ingredients needed for these simple, but awesome cookies.

You can use any kind of peanut butter you'd like (I've even mixed ½ crunchy and ½ smooth before).

  • ½ cup granulated white sugar

  • 1 large egg, room temperature

  • 1 cup peanut butter of your choice


Directions:

Follow these steps to make the dough and bake them up nice.

  1. First, preheat the oven to 350°F and line 2 baking sheets with parchment paper or a baker's mat.

  2. In a large bowl, mix the peanut butter, sugar and egg until well blended.

  3. Using a large spoon or cookie scoop, gently roll dough into 1"-1.5" balls and place on baking sheet. (Don't handle the dough too much with your hands. Move quick.)

  4. With a fork, gently press the dough ball down; turn the fork 90 degrees and gently press down giving the cookie a crisscross pattern. (You can choose other methods such as a thumbprint cookie style, or even pressing a chocolate Kiss into the center like a blossom.)

  5. Bake until the cookies have golden-brown edges. Remove the cookies from the oven and let them cool for 10 minutes. Voila! Your cookies are ready. Serve them right after or store them in an airtight container for up to 1 week.

Try it with whatever mix-ins you'd like! You can add chocolate chips, other nuts, spices like nutmeg or clove, or make a quick powdered sugar frosting. The options are endless with this quick and simple recipe that's always sure to please.
